Roasted Peaches with Vanilla Ice-cream and Raspberries

Ingredients

4 firm ripe peaches, cut into quarters

2 tbsp butter, melted

2 tbsp sugar

1tsp vanilla extract

Vanilla ice cream

Raspberries

Directions

1Pre-heat oven at 200 degrees C. Mix butter, sugar and vanilla; generously coat the peaches with mixture. Roast in oven for 10 to 15 minutes until it has a slightly golden brown colour (alternatively you can grill the peaches on the bbq or stove top).

2To serve, place roasted peaches on the base of a cup, add vanilla ice cream and top with fresh raspberries.
