Roasted Pumpkin and Rocket Salad with Feta Cheese and Pine Nuts

Ingredients

For the Salad

500g rocket, washed and spin dried

3 cups of pumpkin, peeled and cut into small cubes

1/3 cup feta cheese, cubed

handful pine nuts

Fresh ground pepper

Fresh ground sea salt

Olive oil

For the Dressing

1/3 cup olive oil

1/4 cup balsamic vinegar

1 tbsp mustard

3 tbsp honey (depending how sweet you like your dressing)

Fresh ground sea salt

Fresh ground pepper

Directions

1Pre-heat oven at 200 degree C. In a baking sheet, drizzle some olive oil, add the pumpkin cubes, season with salt and pepper and drizzle some more olive oil on top. Roast in the oven for 20 minutes

2To prepare the dressing, mix all the ingredients and taste to make sure that the flavours suite your taste. Keep on the side

3In a large serving plate place the rocket on the base, add the roasted pumpkin, feta cheese and pine nuts. Finally before serving, top the salad dressing across the platter and serve.

4Great starter before any main course dish.
