Berrylicious Oatmeal

This year I was very excited to part of the Beat Diabetes Initiative, it is an annual awareness campaign to promote wholesome eating habits and an active lifestyle.  In support of the campaign I will be sharing some nutritious food tips and healthy recipe ideas.  My first recipe is a wonderful berrylicious oatmeal, the ultimate power breakfast that is not only nutritious but also super delicious.  I love eating oatmeal and I enjoy coming up with lots of creative ways to enjoy this ingredients.

Berrylicious Oatmeal

  • Yields: 1

Ingredients

1 cup almond milk

1/4 cup oatmeal

1 tbsp. almond flakes

1 tbsp. coconut flakes

1 banana, mashed

Handful blueberries

Handful raspberries

1 tsp. cinnamon powder

Agave syrup (optional)

Directions

1Heat the almond milk in a saucepan. Add oatmeal and bring to a boil, then lower heat and simmer for a few minutes. Remove saucepan off the heat and add almond flakes, coconut flakes, mashed bananas, blueberries, raspberries and cinnamon; mix ingredients together

2Serve in individual sized bowls, top with some fresh berries and a drizzle of agave syrup.

    looks delicious! i love adding fruit and coconut flakes to oatmeal! one of my favorite things with oatmeal is that the combinations are endless!
