Apple Crumble Cake

This delicious and moist cake is an extra special treat with a cup of coffee or tea. I love making it when I am entertaining. For a special treat, eat warm with a scoop of vanilla ice cream. 





Apple Crumble Cake

1/2 cup of butter (room temperature)

1 cup of sugar

2 eggs

1 tsp. vanilla

2 cups all-purpose flour

1 tsp. baking power

1 tsp. baking soda

1/4 tsp. salt

1 cup yoghurt

3 cups finely chopped granny smith (or green) apples

Caramel topping

4 tbsp. brown sugar

2 tsp. cinnamon

3 tbsp. butter

3/4 cup chopped pecans

1 apple granny smith (or green) apple, sliced thinly


1Heat oven at 180 degrees Celsius.

2Cream butter and sugar with a mixer.

3Add eggs and vanilla. Beat for 5 minutes until light and fluffy.

4In a separate bowl prepare dry mixture: sift flower, baking power, baking soda and salt.

5Alternatively add dry ingredients and yoghurt to creamed mixture. Don’t over-mix the batter, as not to take the air out of the dry mixture.

6With a spatula, fold in apples.

7Pour the batter into a greased round cake pan, spread evenly.

8To make the caramel topping on the cake, in a small pan on the stove-top mix pecan, brown sugar, cinnamon and butter until crumbly. Sprinkle topping evenly over batter.

9Place sliced apple on top of caramel topping in a circular design.

10Bake for 45 minutes, or until cake is well done.
