Banana Chocolate Chip Muffins

Like his momma, my son has a sweet tooth and loves anything I bake.  I usually like to indulge his sweet tooth with yummy homemade treats that are full of goodness as well.  Today as I was cleaning my freezer I noticed that I had stashed away four ripe bananas in the freezer, and I decided to make some banana inspired treats for my boys. I used half the batter to make a banana loaf for my good friend that has just given birth, and will by stopping by in the morning to give her a treat, and I used the other half and made mini-muffins for my boys, which was also enjoyed by their friends next door 🙂

Below I have put together a simple and easy to follow recipe, hope you enjoy this Banana Chocolate Chip Muffin recipe 🙂


Banana Chocolate Chip Muffins

1/2 cup butter or margarine

1 cup agave syrup (alternatively use white sugar, demarara sugar or brown sugar)

4 eggs

4 very ripe bananas

2 cups all-purpose flour

2 tsp baking powder

pinch of salt

1/2 cup walnut, finely chopped (optional)

1/4 cup chocolate chips (optional)


1Pre-heat the oven to 180 degrees Celcius.

2Mash the bananas with a sturdy fork.

3In a separate bowl, sift flour and baking powder and salt.

4In a mixer, cream the butter and sugar together, add eggs and mix until fully combined. Add the mashed banana's and mix thoroughly. Add the flower and mix. Finally, add the chocolate chips and walnuts to the mixture.

5Line muffin cups (2-½ inches in diameter) with paper bake cups. Fill cups ⅔ full with batter. Bake 30 minutes.

6Let cool before you kids indulge in this fun after-school treat 🙂


* Grease 2 loaf tins with butter, add half the batter mix into each tin. Bake for 40 to 45 minutes.
