Cardamon Infused Chocolate Cake with Pistachios

I love chocolate! I love cardamons! I love pistachios! I love these three ingredients but they are rarely used together.  In the spirit of Ramadan I am mixing these three ingredients to make this delicious treat; it has a deep and rich chocolaty flavour mixed with the nuttiness of the pistachio layered with a subtle hint of cardamom. Perfect with a cup of tea or coffee!


Cardamon Infused Chocolate Cake with Pistachios

1 1/2 cup unsalted butter, room temperature

1 cup sugar

4 large eggs

1 tbsp. pure vanilla extract

1/2 cup unsweetened cocoa powder

1 cup boiling water

1 cup yoghurt

2 cups all-purpose flour

1/4 tsp. fine salt

1 tsp. baking powder

1 tsp. baking soda

1 tsp. cardamom powder

80g of 70 % Cacao Dark Chocolate, roughly chopped.

1 cup pistachio, roughly chopped


20g of 70% Cacao Dark Chocolate, roughly chopped.

1/4 cup pistachio, roughly chopped


1Pre-heat the oven at 180 degrees Celsius. Grease two loaf pans with butter or vegetable oil and coat with cocoa powder.

2Using the Philips Avance Food Processor with the chopping tool, roughly chop the Dark Chocolate and keep aside. Roughly chop the Pistachios and keep aside.

3Prepare the wet ingredient: In a medium bowl, whisk cocoa powder and boiling water together; add the yoghurt and whisk until the mixture is silky and smooth.

4Prepare the dry ingredients: In a large bowl, whisk together flour, salt, baking soda, baking powder and cardamom powder.

5Using the Philips Avance Kitchen Machine mixing bowl, beat the butter, sugar and vanilla with the paddle tool until the ingredients are light and fluffy. Add one egg at a time until it is full incorporated.

6Alternatively add dry ingredients and wet ingredients to the creamed mixture. Don’t over-mix the batter, as not to take the air out of the dry mixture.

7Stir in chopped chocolate and pistachios. Divide and equally pour batter into the prepared loaf pans, top with chopped pistachio and chopped chocolate. Bake for 60 to 70 minutes.
