Spaghetti with Garlic Shrimp and Coriander

I have been meaning to upload this recipe for a while now. Life can get a bit hectic with three kids all under the age of 7 years old. So a few weeks back I had promised my friends to visit Souq Naif. It is literally a maze of shops selling everything from gold, spices, textiles, car parts, clothing, home appliance and everything in-between. We were specifically planning on visiting the art and crafts section of the souq; you can find everything from ribbons, beads and crystals to scissors, glue guns and zippers at amazing prices. If you are a DIY person this place is your heaven.

Whenever I venture down to the old part of Dubai I make a point to visit the Deira Fish and Vegetable Market. It is a foodie’s heaven! Here you can find the freshest selection of different types of fish. It can be a bit overwhelming having all the different fish vendors showing off their produce with the hopes of you choosing their stall. I love haggling with these guys it makes the experience more fun and I walk away feeling like I got a good deal. After visiting a few of these stalls I ended up buying 1 kilo of jumbo shrimp which I used for to make a delicious spaghetti dish with garlic shrimp and coriander. This is a great dish that the adults and kids will enjoy.

Hope you enjoy this recipe as much as we did!

Spaghetti with Garlic Shrimp and Coriander

May 21, 2016

  • Prep Time: 15 mins
  • Cook Time: 15 mins
  • Yields: 4

375 g Spaghetti

1 kg Jumbo Shrimp, de-shelled and thoroughly cleaned

Olive oil

1 onion, thinly sliced

4 garlic cloves, finely chopped

2 cup cherry tomatoes, halved

Handful fresh coriander, finely chopped

Fresh ground pepper

Chili flakes (optional)

1Add water into a large pot and bring it to a boil. Add about 4 teaspoon of table salt, 2 tablespoon of olive, and spaghetti to the boiling water. Cook until al dente and drain. I prefer using a pasta pot because it includes a strainer and it is easy to drain.

2In a wok add about 4 tablespoons of olive oil and sauté onions on medium heat until they are translucent. (Variation: If you will be making this dish spicy add 1 fresh red or green chili, chopped de-seeded, with the onions and sauté.)

3Add garlic and tomatoes and stir for a couple of minutes. Add the jumbo shrimp and sauté the shrimps until its colour changes from a translucent to a light pink colour and season with salt and pepper. It is important not to over cook the shrimp as it can easily and quickly become dry.

4Add the cooked spaghetti and a quarter cup of the pasta water into the wok and combine the ingredients together. Top with some fresh chopped coriander and squeeze some fresh lemon juice for added flavour and serve.

5OPTIONAL: Add some chili flakes to your pasta dish for added flavour and spice.
