One Pot Garlic Shrimp and Coriander Linguini

Delicious one pot garlic shrimp and coriander pasta, a quick meal fix that is my eldest son’s favourite. I always like to add a squeeze of lemon juice before serving. Hope you like this recipe as much as our family does.


One Pot Garlic Shrimp and Coriander Linguini

375g linguini

1 kg Jumbo Shrimp, de-shelled and thoroughly cleaned

Olive oil

1 onion, thinly sliced

1 fresh red or green chilli (optional)

4 garlic cloves, finely chopped

2 cup cherry tomatoes, halved

Handful fresh coriander, finely chopped

Coarse Sea Salt

Fresh ground pepper



1Add water into a large pot and bring it to a boil. Add about 4 teaspoon of coarse sea salt, 2 tablespoon of olive, and spaghetti to the boiling water. Cook until al dente and drain. I prefer using a pasta pot because it includes a strainer and it is easy to drain.

2In a wok add about 4 tablespoons of olive oil and sauté onions on medium heat until they are translucent. (Variation: If you will be making this dish spicy add 1 fresh red or green chili, chopped de-seeded, with the onions and sauté.)

3Add garlic and tomatoes and stir for a couple of minutes. Add the jumbo shrimp and sauté the shrimps until its colour changes from a translucent to a light pink colour and season with fresh ground sea salt and black pepper. It is important not to over cook the shrimp as it can easily and quickly become dry.

4Add the cooked spaghetti and a quarter cup of the pasta water into the wok and combine the ingredients together. Top with some fresh chopped coriander and squeeze some fresh lemon juice for added flavour and serve.
