Lemon & Thyme Roasted Chicken

1 whole chicken

4 large potatoes, cut into thick slices

1 large lemon, juiced

1/3 cup olive oil

3 stems of fresh thyme, finely chopped

2 tsp minced garlic

1 tsp salt

1/2 tsp black pepper


1Pre-heat oven at 250 degrees Celsius.

2To prepare the marinade mix lemon juice, olive oil, fresh thyme, minced garlic, salt and pepper in a small bowl.

3Thoroughly wash and pat dry the chicken, slightly season with salt. Place the chicken and potatoes in a large oven pan. Rub the marinade on the chicken and the potatoes.

4Place the pan in the oven and roast at 250 degrees for 15 minutes. After 15 minutes reduce the over temperature to 170 degrees Celsius and leave in the oven for 50 to 60 minutes

5Serve with green salad.
