Instructions
Measure two Turkish coffee cups of water and pour into a small brass Turkish coffee pot (cezve).
Add the finely ground coffee and sugar (if using), and stir until well combined.
Place the cezve over low to medium heat. Stir occasionally until the coffee begins to foam but does not boil.
Once the foam rises, remove the cezve from the heat. Carefully spoon some of the foam into the Turkish coffee cups.
Return the cezve to the heat and let it foam again. Repeat the process one or two more times to develop a thick, rich foam.
Pour the coffee into the cups, ensuring an even distribution of foam.
Serve immediately with a glass of water and dates or other sweet treats.
Tip: Serve with stuffed figs, apricots and dates
