Cranberry Sauce:
In a medium-sized pot over medium heat, combine the white sugar, brown sugar, cinnamon stick, orange juice, and water. Allow the mixture to come to a simmer, stirring until the sugar dissolves.
Add the cranberries to the simmering liquid. Let them cook for about 8-10 minutes or until they burst and the sauce thickens.
Stir in the orange zest, and then remove the pot from the heat. Allow the cranberry sauce to cool. This homemade cranberry sauce will be used as a delightful filling for the puff bites.
Puff Bites
Preheat your oven to 200°C. Coat the wells of a mini cupcake pan.
Roll out the thawed puff pastry sheet on a lightly floured surface and cut it into small squares, approximately 2x2 inches each.
Gently press each pastry square into the wells of the mini cupcake pan to create mini pastry cups.
Place a small cube of Brie cheese and a dollop of homemade cranberry sauce in each pastry cup.
Brush the tops of the puff bites with beaten egg for a golden finish when baked.
Bake in the preheated oven for about 15-20 minutes or until the pastry is golden brown and puffed, and the Brie inside is beautifully melted.
Once out of the oven, garnish the bites with fresh rosemary or thyme leaves if desired.
