Brie and Cranberry Puff Bites
- 350 g cranberries
- ¾ cup white sugar
- ¼ cup brown sugar
- ½ cup orange juice
- ½ cup water
- zest from one orange
- 1 cinnamon stick
Brie and Cranberry Puff Bites:
- 1 sheet puff pastry , thawed
- 200 g brie cheese, cut into small cubes
- homemade cranberry sauce, (from the above recipe)
- 1 egg, beaten (for eggwash)
- fresh rosemary or thyme leaves, for garnish (optional)
- In a medium-sized pot over medium heat, combine the white sugar, brown sugar, cinnamon stick, orange juice, and water. Allow the mixture to come to a simmer, stirring until the sugar dissolves.
- Add the cranberries to the simmering liquid. Let them cook for about 8-10 minutes or until they burst and the sauce thickens.
- Stir in the orange zest, and then remove the pot from the heat. Allow the cranberry sauce to cool. This homemade cranberry sauce will be used as a delightful filling for the puff bites.
- Preheat your oven to 200°C. Coat the wells of a mini cupcake pan.
