Creamy Whipped Feta with Caramelized Dates

Ingredients 

  • 200 g cream cheese
  • 100 g feta cheese
  • 2 tbsp olive oil
  • 2 – 3 tbsp butter
  • 6 medjool dates, cubed
  • 2 tsp fresh thyme, chopped
  • cup honey
  • ½ tsp chilli pepper
  • pinch of cinnamon powder

Instructions

  • In a food processor, combine the cream cheese, feta cheese, and olive oil. Pulse until the mixture is smooth and creamy.
  • In a shallow frying pan, melt the butter. Add the cubed dates, sprinkle a pinch of cinnamon powder and sauté until they become soft, and the butter takes on a light brown hue. Turn off the heat and sprinkle in 1 teaspoon of freshly chopped thyme.
  • In a small bowl, whisk together ⅓ cup of honey, 1 teaspoon of fresh thyme, and a pinch of chilli pepper.
  • Spoon the whipped cheese mixture onto a serving platter, then top it with the warm, caramelised dates and butter. Drizzle the rosemary honey over the top for an extra burst of flavour.
  • Serve this delectable spread with your choice of bread or crackers, and enjoy!
