Ingredients

white cabbage head

finely shredded

carrots

finely shredded

small bunch coriander
,
roughly chopped

dried cranberries

pumpkin seeds
Dressing

tbsp
rice vinegar
1
lemon
,
juiced
1
tbsp
fresh ginger
,
minced

cup
olive oil

tsp
dried oregano

tsp
cumin seeds

dry roasted
salt
freshly ground black pepper
Instructions
In a small bowl, whisk together rice vinegar, lemon juice, ginger, olive oil, dried oregano, cumin seeds, salt and pepper.
In a large bowl add cabbage and gently massage with hands to soften. Add carrots, coriander, cranberries and pumpkin seeds.
Pour dressing over salad and gently toss. Serve.
