500gwhole king prawns, deveined, deshelled and tail on
½ cupcornflour
6-8garlic cloves, finely minced
½ inchginger, finely minced
1largered chilli
1-2spring onions, chopped
oil, for shallow frying
Instructions
Make the Salt & Pepper Seasoning
Dry roast Sichuan pepper and black peppercorn. Toast over low heat while stirring from time to time.
Once spices become very fragrant, remove from the heat then grind in a mortar with the rest of the spices until it has a fine consistency.
Prepare the Shrimp
Rinse the shrimp under running water. Use kitchen paper to pat dry.
Coat the prawns evenly with cornflour.
In a pan with hot oil, fry the prawns until they turn a light pink colour with a crispy exterior. Ensure not to over crowd the pan. Transfer the fried prawns to a plate.
In a wok, adda couple of tablespoons of oil. Add red chilli pepper, garlic, ginger and spring onions. Fry over medium heat for about 1 min. Addthe prawns back into the wok, sprinkle the prepared seasoning to taste, andtoss well to coat evenly.
Garnish with chopped spring onions and serve immediately.
