Chinese Salt and Pepper Prawns

Ingredients 

Salt and Pepper Seasoning

  • 1 tbsp whole sichuan pepper
  • 1 tsp black peppercorn
  • 1 tbsp salt
  • ½ tsp white pepper
  • ¼ tsp sugar

Prawns

  • 500 g whole king prawns, deveined, deshelled and tail on
  • ½ cup cornflour
  • 6-8 garlic cloves, finely minced
  • ½ inch ginger, finely minced
  • 1 large red chilli
  • 1-2 spring onions, chopped
  • oil, for shallow frying

Instructions

Make the Salt & Pepper Seasoning

  • Dry roast Sichuan pepper and black peppercorn. Toast over low heat while stirring from time to time.
  • Once spices become very fragrant, remove from the heat then grind in a mortar with the rest of the spices until it has a fine consistency.

Prepare the Shrimp

  • Rinse the shrimp under running water. Use kitchen paper to pat dry.
  • Coat the prawns evenly with cornflour.
  • In a pan with hot oil, fry the prawns until they turn a light pink colour with a crispy exterior. Ensure not to over crowd the pan. Transfer the fried prawns to a plate.
  • In a wok, adda couple of tablespoons of oil. Add red chilli pepper, garlic, ginger and spring onions. Fry over medium heat for about 1 min. Addthe prawns back into the wok, sprinkle the prepared seasoning to taste, andtoss well to coat evenly.
  • Garnish with chopped spring onions and serve immediately.
