Creamy Vanilla Steel-Cut Oats with Lemon Blueberry Topping

Ingredients
Steel-cut Oats
1cuphigh-quality steel-cut oats
3cupswater (or a mix of water and milk for a creamier texture)
apinch ofsalt
1tspvanilla extract

1lemon, juiced
1lemon, zest
blueberries, fresh or frozen
almond butter
almond flakes
Instructions
Boil: In a medium saucepan, bring the water or water-milk mixture to a boil.
Add Oats and Salt: Once boiling, gently stir in the steel-cut oats and a pinch of salt.
Simmer: Reduce the heat to a low simmer. Cook the oats for 20-30 minutes, stirring occasionally to prevent them from sticking to the pan. A few minutes before the oats are done, stir in the vanilla extract.
Check Consistency: The oatmeal is ready when it has absorbed most of the liquid and has a creamy yet slightly chewy consistency.
Rest: Remove the saucepan from the heat and let the oatmeal sit for a few minutes to thicken.
Lemon Blueberry Assembly: Stir in lemon juice, half of the blueberries, and some almond flakes into the warm oats. Add a hint of lemon zest for a citrusy kick.
Serve: Spoon the oatmeal into bowls. Top with the remaining blueberries, a dollop of almond butter, additional almond flakes, and a sprinkle of lemon zest.
