Steel-cut Oats
1cuphigh-quality steel-cut oats
3cupswater or a mix of water and coconut milk for a creamier texture
apinch ofsalt
1tspvanilla extract
Toppings
1cupmango, diced
1passion fruit
1tbspcoconut flakes
2tbspGreek yoghurt
Instructions
Boil: In a medium saucepan, bring the water or water-coconut milk mixture to a boil.
Add Oats and Salt: Once boiling, gently stir in the steel-cut oats and a pinch of salt.
Simmer: Lower the heat to maintain a gentle simmer. Add the vanilla extract. Let the oats cook for 20-30 minutes, stirring now and then to prevent sticking and ensure even cooking.
Check Consistency: The oatmeal is ready when it has absorbed most of the liquid, and the texture is creamy but the oats are still slightly chewy.
Rest: Take the saucepan off the heat and let the oatmeal stand for a few minutes to reach the desired thickness. Stir in half the mango and coconut flakes.
Tropical Assembly: Spoon the oatmeal into bowls. Top with chopped mango, passion fruit, and a sprinkle of coconut flakes. Add a dollop of Greek yogurt for creaminess and a slight tang.
Serve: Enjoy this tropical-inspired oatmeal warm, immersing yourself in the delightful combination of creamy oats, sweet mango, tangy passion fruit, and the exotic hint of coconut, all balanced with the smoothness of Greek yogurt.
