Prepare theTruffle Mixture. In a small pot, add the chocolate chips, coconut oil, and coconut cream, and over low heat gently melt the ingredients until they are combined. Remove from heat. Add the peanut butter, vanilla extract, and sea salt to the chocolate mixture. Stir until all ingredients are thoroughly incorporated. Transfer the mixture into a bowl, and place in the refrigerator for about 30minutes to firm up.
Shape the Truffles: Using a small cookie scoop or a spoon, scoop out portions of the chilled mixture and roll them into balls. If the mixture gets to sticker, coat your hands with cocoa powder. Place the truffles on a baking sheet lined with parchment paper. Allow the truffle balls to rest in the fridge for an hour, or ideally overnight.
Prepare the Chocolate Coating. Melt the remaining ½ cup of chocolate chips in the microwave in 30-second increments until fully melted. Stir until smooth.
Coat the Truffles: Remove the truffles from the fridge and dip each one into the melted chocolate, ensuring they are evenly coated. Place them back on the parchment-lined sheet. While the chocolate coating is still soft, sprinkle a little sea salt over the top of each truffle for a delightful sweet and salty contrast. Alternatively, coat the truffle with topping of choice.
