In a bowl, combine the strawberries, sugar, and balsamic vinegar. Toss well to coat the strawberries evenly with the sugar and vinegar. Allow the strawberry mixture to sit for at least 15 minutes. This will allow the strawberries to release their juices and the flavours to meld together.
Scoop your desired amount of vanilla ice cream into serving bowls or glasses, spoon a generous amount of the strawberries over the vanilla ice cream. If you like, you can drizzle a little bit of the marinating juice over the top of the strawberries and ice cream for an extra burst of flavour.
