Simple and Easy Raspberry Compote
Raspberry compote is one of those simple recipes that is incredibly useful to have in the fridge. Made with just a handful of ingredients and ready in about 15 minutes, it can instantly add colour, flavour and a little sweetness to everything from breakfast bowls to desserts.
The raspberries are gently cooked with sugar, fresh lemon juice and lemon zest until they soften and release their juices, creating a beautiful sauce that sits somewhere between fresh berries and jam. I like my compote to retain some texture, with pieces of raspberry running through it rather than cooking the fruit down completely.
The lemon juice balances the sweetness and brightens the natural flavour of the raspberries, while the zest adds a fresh citrus note that works beautifully with the berries.
For breakfast, I love serving it with thick Greek yoghurt, Homemade Chocolate Cocoa Granola and a handful of fresh raspberries. But it’s an incredibly versatile recipe to have on hand. Spoon it over pancakes, porridge or French toast, swirl it through yoghurt, or use it as a topping for cheesecake, panna cotta or vanilla ice cream.

Ingredients Used for Raspberry Compote
Compote:
Raspberries: The base of the compote. Both fresh and frozen raspberries work well. Frozen berries tend to release more liquid as they cook and may need a few additional minutes to thicken.
Granulated sugar: Balances the natural tartness of the raspberries and helps create a lightly syrupy consistency.
Fresh lemon juice: Adds acidity, balances the sweetness and helps bring out the flavour of the raspberries.
Lemon zest: Adds a fresh citrus fragrance and another layer of flavour without adding additional acidity.

Alternative Ingredients
Frozen raspberries: Use them directly from frozen without thawing first. Allow a little additional cooking time if needed.
Mixed berries: Substitute some of the raspberries with strawberries, blueberries or blackberries.
Sugar: Honey or maple syrup can be used instead of granulated sugar, although both will change the flavour slightly.
Orange: Fresh orange juice and zest can replace the lemon for a sweeter, softer citrus flavour.
Vanilla: Add a little vanilla extract after cooking for a warmer flavour, particularly if you’re serving the compote with desserts.
Preparation Tips for Raspberry Compote
- Don’t Overcook the Raspberries: Compote should retain some of the texture of the fruit. As the raspberries cook, gently crush some with the back of a spoon while leaving others partially intact.
- Finely Zest the Lemon: Use a fine grater or Microplane to remove only the yellow outer layer of the lemon. Avoid the white pith underneath, which can add bitterness.
- Adjust the Sweetness: The sweetness of raspberries varies, so taste the compote as it cooks. If your berries are particularly tart, you can add a little more sugar. If you’re serving the compote with something sweet, you may prefer to keep it slightly more tart.
- Remember It Thickens as It Cools: Remove the compote from the heat while it still has a loose, spoonable consistency. It will naturally become thicker as it cools.
Serving Tips for Raspberry Compote
- One of my favourite ways to serve Raspberry Compote is with Greek yoghurt, Homemade Chocolate Cocoa Granola and fresh raspberries. The creamy yoghurt, tart berries and crunchy chocolate granola work beautifully together.
- You can also serve it with pancakes, waffles, French toast, porridge, overnight oats, chia pudding, cheesecake, panna cotta, pavlova or vanilla ice cream.
- Serve it chilled with yoghurt and breakfast bowls, or warm it gently for pancakes, waffles and desserts.
Storage Tips
Refrigerator: Allow the compote to cool completely before transferring it to an airtight container. Refrigerate for up to 5–7 days.
Freezer: Store in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before serving.
Raspberry Compote
Ingredients
- 400 g raspberries, fresh or frozen
- ¼ cup granulated sugar
- 1 tbsp fresh lemon juice
- 1 tsp finely grated lemon zest
Instructions
- Add the raspberries, granulated sugar, lemon juice and lemon zest to a medium saucepan. Stir gently to combine.
- Place over medium heat and bring to a gentle simmer. Cook for 10–15 minutes, stirring occasionally, until the raspberries have softened and released their juices. Continue cooking until the juices have reduced slightly and the compote has a loose, spoonable consistency.
- Remove from the heat and allow the compote to cool completely. It will continue to thicken as it cools. Store in an airtight container in the refrigerator for up to 5–7 days.
- Serve with your favourite breakfast or dessert.
