If you were to ask me about my ultimate meal, it would undoubtedly feature a freshly baked French baguette, generously slathered with salted butter and accompanied by a side of cheese. It’s a simple pleasure that never fails to bring joy to my taste buds.

Have you ever tried a Butter Board? I confess I was initially sceptical when I first encountered the concept, but I have become totally obsessed after succumbing to curiosity and trying it myself. Now, I eagerly prepare it, especially when I host dinner parties. The Butter Board is a creation that encapsulates everything I hold dear about butter, magnificently showcasing its unparalleled ability to elevate flavours. It’s a meticulously curated ensemble that captivates your taste buds and engages each of your senses.

To prepare a butter board I start by layering strokes of butter on a wooden canvas, complemented by a subtle sprinkling of sea salt. Then the fun begins, and you can start layering your preferred toppings to compliment your menu. For festive occasions, I love preparing something vibrant and visually captivating. I introduce an ensemble of ingredients that resonate harmoniously with the velvety butter. The zest of fresh lemon contributes a revitalising, citrusy note, while aromatic thyme infuses an earthy and herbaceous essence. The experience is further elevated with the introduction of sweet, succulent red and green figs, creating an enchanting interplay of flavours that transition from sweet to subtly tart.

And then, there’s the irresistible allure of goat cheese, introducing a tangy contrast that harmoniously complements every element on the board. For those who crave a hint of heat, a gentle sprinkle of chilli flakes enlivens the palate, introducing an exhilarating touch of spiciness to the ensemble.

Basic Ingredients for a Butter Board

Unsalted Butter: The star of the show, butter, forms the velvety canvas for this creation. Unsalted butter is preferred as it allows for better control of the saltiness, which is later added in the form of sea salt flakes.

Sea Salt Flakes: Sea salt flakes sprinkled over the butter enhance its richness and provide a delightful contrast to the sweet and savoury elements on the board.

Zest of One Lemon: The lemon zest adds a burst of refreshing citrusy flavour, brightening up the entire ensemble and providing a lovely counterpoint to the richness of the butter.

Butter Board

Ingredients 

  • 200 g unsalted butter, room temperature
  • sea salt flakes
  • zest of one lemon
  • handful fresh thyme sprigs
  • 6-8 red and green figs, sliced
  • 100 g creamy goat cheese
  • ¼ tsp red chilli flakes, optional
  • 1 tbsp honey, for drizzling
  • handful edible flowers, for garnish

Instructions

  • Start with a wooden serving board or platter that has enough space for all the ingredients. Take the room-temperature unsalted butter and begin artfully spreading it across the board in strokes. Allow your creativity to guide you; there's no need for perfection here. Once the butter is evenly spread, gently sprinkle sea salt flakes over the butter. The salt will beautifully complement the richness of the butter.
  • Grate the zest of one lemon over the butter. The lemon zest will infuse a refreshing citrusy note into your butter ensemble.
  • Place fresh thyme sprigs strategically on the butter. Thyme will contribute an earthy, herbaceous quality that pairs wonderfully with the other elements.
  • Arrange sliced red and green figs across the board. The figs will add a delightful play of flavours, transitioning from sweet to slightly tart, and also create a visually captivating contrast.
