Basic Ingredients for Creamy Vanilla Steel-Cut Oats with Cherry & Chocolate Topping

Steel-Cut Oats:

Steel-Cut Oats: These are the foundation of the dish, providing a hearty, chewy texture and a nutty flavour. They’re a great source of fibre, which helps with digestion and prolongs the feeling of fullness.

Water or Milk: Water is essential for cooking the oats, but adding milk (dairy or plant-based) creates a creamier texture and adds a hint of sweetness and extra richness.

Salt: A pinch of salt enhances the flavours of the other ingredients, balancing the sweetness of the cherries and chocolate.

Vanilla Extract: Vanilla adds a subtle sweetness and aroma, complementing both the oats and the toppings.

Toppings:

Cherries: Fresh or frozen cherries provide a juicy, tart contrast to the sweetness of the chocolate, adding a burst of flavour and antioxidants.

Dark Chocolate Chips: Chocolate adds a rich, indulgent element to the oatmeal, creating a luxurious taste experience, especially as it melts into the warm oats.

Hazelnut Butter: This adds a creamy texture and a rich, nutty flavor that pairs beautifully with both the cherries and chocolate.

Oats: If steel-cut oats aren’t available, rolled oats are a quicker-cooking alternative, though they’ll provide a softer texture.

Fruits: Blueberries, raspberries, or strawberries can replace cherries for a different flavour profile.

Nuts and Nut Butter: Almond butter or peanut butter can substitute for hazelnut butter, and almonds or pecans can replace hazelnuts.

Chocolate: Milk chocolate or white chocolate chips can be used instead of dark chocolate for a sweeter taste.

Creamy Vanilla Steel-Cut Oats with Cherry & Chocolate Topping

Servings: 2 persons
Prep Time: 5 minutes
Cook Time: 23 minutes

Ingredients

Steel-cut Oats

  • 1 cup high-quality steel-cut oats
  • 3 cups water (or a mix of water and milk for a creamier texture)
  • a pinch of salt
  • 1 tsp vanilla extract

Toppings

  • ¾ cup fresh or frozen cherries
  • 2 tbsp dark chocolate chips
  • 4 tbsp hazelnut butter
  • 2 tbsp slightly crushed hazelnuts

Instructions

  • Boil: In a medium saucepan, bring the water or water-milk mixture to a boil.
  • Add Oats and Salt: Once boiling, gently stir in the steel-cut oats and a pinch of salt.
  • Simmer: Reduce the heat to maintain a low simmer. Stir in the vanilla extract. Cook the oats for 20-30 minutes, stirring occasionally to prevent them from sticking to the bottom.
  • Check Consistency: The oatmeal is ready when it has absorbed most of the liquid and has a creamy yet slightly chewy consistency.
  • Rest: Remove the saucepan from the heat and let the oatmeal sit for a few minutes to thicken.
  • Cherry & Chocolate Assembly: Stir half of the cherries and chocolate chips into the warm oats, along with a dollop of hazelnut butter. Then, top the oatmeal with the remaining cherries, a sprinkle of crushed hazelnuts, and more chocolate chips.
  • Serve: Garnish each serving with a spoonful of hazelnut butter, allowing its richness to meld with the warm, creamy oats, tart cherries, and melting chocolate chips.
