Crispy Lemony and Spicy Brussel Sprouts

Brussel sprouts may have a bad reputation, but they are actually versatile and flavourful vegetables. When roasted, they become tender and crispy with a sweet and nutty flavour that pairs perfectly with a variety of seasonings.

To make this recipe, you’ll start by preparing your sprouts. Trim the ends and cut them in half so they will roast evenly. Then, toss them in a mixture of olive oil, minced garlic, lemon juice and rind, and optional chilli flakes for a little kick of heat. Season with salt and freshly ground black pepper to taste before roasting in the oven.

As the sprouts roast, the lemon and garlic infuse their flavour, making them even more delicious. And just when you think they can’t get any better, sprinkle on some grated Parmesan cheese for a savoury finish.

Basic Ingredients for Crispy, Lemony and Spicy Brussel Sprouts

Brussel Sprouts:

Brussels Sprouts: These small, green, cabbage-like vegetables are packed with essential vitamins and minerals. When roasted, they become tender and crispy with a sweet and nutty flavour.

Olive Oil: This heart-healthy oil is rich in monounsaturated fats, which can help lower cholesterol levels and reduce the risk of heart disease. It also adds a delicious, nutty flavour to the Brussels sprouts.

Lemon Juice and Rind: Lemon is a great source of vitamin C and adds a tangy, acidic flavor to the Brussels sprouts. The juice and rind are used in this recipe to infuse the sprouts with citrus flavour.

  • Serve either family-style in a large rustic bowl or on individual plates as a side to your favourite roast.
  • Serve with extra parmesan on the side for cheese lovers.
  • After cooking serve while still hot.
  • Brussel sprouts go great with a bit of heat, if you do not toss the chili flakes in with the Brussel sprouts serve separately for those that like a little heat.

  • Cooked Brussel sprouts hold well in the fridge for up to three days, in an airtight container.
  • Before refrigerating your cooked Brussel sprouts make sure they have cooled to room temperature.
  • Reheat in the microwave or oven before eating.
  • Brussel sprouts that have been cooked can be frozen and kept for up to three months. Make sure they are well sealed in an airtight container.
  • The best way to reheat frozen brussel sprouts is to roast them at a high heat of 200°C until warmed through.

Ingredients 

  • 750 g sprouts end, trimmed, and halved
  • 3 tbsp olive oil
  • 2 tsp minced garlic
  • 1/2 lemon, juiced
  • 1 tsp lemon rind
  • 2 tsp chili flakes (optional)
  • salt to taste
  • freshly ground black pepper
  • 3/4 cup of grated Parmesan cheese

Instructions

  • Preheat the oven to 200°C
  • Place brussel sprouts, olive oil, garlic lemon juice, lemon rind, salt, and pepper into a large bowl. If you choose to use chili flakes add them in now. Mix well.
  • Spread the Brussels sprouts mixture on a baking sheet, making sure they are spread evenly to ensure that they cook evenly. Bake for 10 minutes and remove from the oven.
  • Toss the Brussels sprouts to turn them, ensuring a nice browning all round, and bake for an additional 5–10 minutes or until the sprouts are golden-brown in color.
  • Remove from oven, toss the Brussels sprouts with the Parmesan cheese, and serve.
