  • 1 capsicum, cubed
  • 4 small cucumbers, chunked
  • 1 small onion, thinly sliced
  • 200 g feta cheese, crumbled
  • whole kalamata olives
  • 1 lemon, juiced
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • pink salt, to taste
  • freshly ground pepper, to taste

Instructions

  • In a small bowl, whisk together the lemon juice, olive oil, and oregano. Season with pink salt and freshly ground pepper to taste.
  • On a large serving plate, arrange the cubed tomato, capsicum, chunked cucumbers, and sliced onion.
  • Sprinkle the crumbled feta cheese and whole green olives on top of the arranged vegetables.
