Basic Ingredients for Spicy Peanut Fried Noodles
Fried Noodles:
Fresh Egg Noodles: Egg noodles are the heart of this dish, providing a chewy texture that holds up well to the robust sauce. They cook quickly and absorb flavours beautifully, making them a perfect base for any stir-fry.
Green Onions: Green onions add a fresh, mild onion flavor and a pop of colour to the dish. They are often used in Asian cuisine for their ability to enhance the overall taste without overpowering other ingredients.
Sesame Seeds: Sesame seeds bring a subtle nuttiness and a slight crunch to the dish. They are often used as a garnish to add texture and visual appeal.
Crushed Salted Peanuts: Crushed peanuts contribute a delightful crunch and a rich, savoury flavour that complements the creamy peanut butter in the sauce. They also add a touch of saltiness that enhances the overall taste.
SHauce Umami Crunch: A brand of condiment that adds a rich, savoury umami flavour and a crunchy texture to the dish. It can be substituted with other umami-rich sauces or condiments.

alternative ingredients
Noodles: If you don’t have fresh egg noodles, you can use Indomi noodles or any other type of quick-cooking noodles. Rice noodles or soba noodles can also work well, offering different textures and flavours.
Soy Sauce: For a gluten-free option, tamari can be used in place of soy sauce. It offers a similar umami flavour without the gluten.
Peanut Butter: If you have a peanut allergy or prefer a different flavour, almond butter or sunflower seed butter can be substituted. These alternatives will provide a similar creamy texture with a slightly different taste profile.
Chinese Sesame Paste or Tahini: Tahini is a great alternative if Chinese sesame paste is not available. Both are made from sesame seeds, but tahini has a milder flavour compared to the more robust taste of Chinese sesame paste.
Preparation Tips for Spicy Peanut Fried Noodles
- Boil the Noodles: Cook the noodles until al dente, as they will continue to cook slightly when mixed with the hot sauce.
- Reserve Cooking Water: Save some of the noodle cooking water. It’s starchy and can help adjust the sauce consistency.
- Mixing the Sauce: If the sauce is too thick, thin it out with a small amount of reserved cooking water until it reaches your desired consistency.
Serving Tips for Spicy Peanut Fried Noodles
- Garnish Generously: Top your noodles with extra crushed peanuts, green onions, and sesame seeds for added texture and flavor.
- Serve Hot: These noodles are best enjoyed hot, right after preparation, when the sauce is most flavourful and the noodles are perfectly tender.
storage tips
- Refrigerate Leftovers: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat Carefully: Reheat gently in a microwave or on the stovetop, adding a splash of water or broth to loosen the sauce if it has thickened.
