This simple yet flavourful breakfast option combines the creamy texture of yogurt and oats with the tart sweetness of fresh raspberries. Prepared the night before, these overnight oats are perfect for busy mornings, ensuring you have a wholesome and satisfying meal ready to go. The addition of desiccated coconut, almond flakes, and chia seeds not only enhances the flavour but also provides a boost of energy to keep you going throughout the day.

Basic Ingredients for Raspberry Overnight Oats
Raspberry Overnight Oats:
Plain Yogurt: Yogurt adds a creamy texture to the oats while contributing to the overall richness of the dish. It also contains beneficial bacteria that support gut health.
Rolled Oats: Rolled oats are the foundation of overnight oats. They absorb the liquid and soften overnight, creating a tender and satisfying texture. Oats are known for their ability to keep you feeling full and energized.
Unsweetened Milk of Choice: Whether you prefer almond, soy, or cow’s milk, this ingredient adds the necessary moisture for the oats to soften and blend with the other ingredients. It also helps achieve the desired consistency.
Raspberries: Fresh raspberries bring a burst of tart sweetness to the dish. Their vibrant flavour pairs beautifully with the creamy oats and yogurt, making each bite delightful.
Desiccated Coconut: This adds a subtle coconut flavour and a bit of texture to the oats, enhancing the overall taste experience.
Almond Flakes: Almond flakes provide a satisfying crunch and a nutty flavour that complements the creaminess of the oats and yogurt.
Chia Seeds: Chia seeds are known for their ability to absorb liquid and create a gel-like consistency. They add a slight crunch and help thicken the oats while providing an extra boost of energy.
Salt: A pinch of salt enhances the flavours of all the ingredients, balancing the sweetness and tartness perfectly.
Date Syrup or Maple Syrup: These natural sweeteners add a touch of sweetness to the oats without overpowering the other flavours. They blend seamlessly with the raspberries and coconut.

Serving tips
Store in an airtight container: After preparing the oats, transfer them to an airtight container with a lid. This will help prevent moisture from seeping in and keep the oats fresh.
Keep refrigerated: Store the oats in the refrigerator overnight, or for up to 5 days. This will allow the oats to soften and soak up the liquid, making them ready to eat in the morning.
Mix before serving: Before serving, give the oats a good stir to ensure that all the ingredients are well combined. You can also add a splash of milk or yogurt if the oats have become too thick.
Make ahead: If you want to prepare multiple servings at once, you can double or triple the recipe and store the oats in individual portions. This is a great way to save time and have a healthy breakfast ready to go throughout the week.
Freeze for later: If you want to store the oats for a longer period of time, you can freeze them in an airtight container or freezer-safe bag for up to 3 months. Thaw the oats in the refrigerator overnight before eating.
